Tangy Broiled Sole
|Spanish onion||1 , peeled|
|Melted butter||4 Tablespoon|
|Fresh tomatoes||4 , chopped|
|Sole fillets||1 Pound|
|Flour||1⁄2 Cup (8 tbs)|
|Sour cream||1 Cup (16 tbs)|
Thinly slice onion and saute in half the butter until brown.
Spread in a shallow bake pan and cover with chopped tomatoes.
Sprinkle with salt and pepper.
Lightly flour fillets and arrange on top.
Drizzle with remaining butter.
Broil until lightly browned and flaky, about 5 minutes.
Spread with sour cream and broil until cream is heated through and colored.
