Mauna Loa Sole
|Sole fillets||2 Pound (Boneless)|
|Chopped onion||2 Teaspoon|
|Water||1 1⁄2 Teaspoon|
|Mayonnaise||3⁄4 Cup (12 tbs)|
|Lemon juice||1 1⁄2 Teaspoon|
|Seasoned salt||1⁄4 Teaspoon|
|Finely chopped parsley||2 Tablespoon|
|Chopped macadamia nuts/1/3 cup slivered almonds||1 Cup (16 tbs)|
Dry fillets and sprinkle with salt.
Roll fish and secure with toothpicks.
Place fish in a shallow (10x6-inch) glass baking dish and cover loosely with waxed paper.
Microwave 4 minutes on high.
Mix together onion, water, mayonnaise, lemon juice, seasoned salt and parsley in a separate bowl.
Coat fillets with sauce and return to microwave Cover with waxed paper and microwave 1 minute on high or just until sauce is hot.
Sprinkle with nuts and serve immediately.
