Fillet Of Sole Amandine
|Milk||1 Cup (16 tbs)|
|Whole-wheat flour||1⁄2 Cup (8 tbs)|
|Powdered milk||1⁄4 Cup (4 tbs)|
|Sesame oil||1⁄4 Cup (4 tbs)|
|Butter||1⁄2 Cup (8 tbs)|
|Almonds||1⁄4 Cup (4 tbs), slivered|
Place fillets in a dish and add milk to cover.
Let stand for one hour then drain and dredge in flour mixed with powdered milk and seasonings.
Saute in oil until golden brown, about 5 minutes on each side.
Wipe out skillet and add butter.
When foamy add almonds.
Pour over fish and serve with lemon wedges, boiled potatoes, green vegetables, and a fruit salad.
