Stuffed Red Snapper
|Red snapper||4 Pound, cleaned (1 piece)|
|Onion||1⁄2 Small, minced|
|Stale bread crumbs||1 Cup (16 tbs)|
|Fine cracker crumbs||1⁄2 Cup (8 tbs)|
|Chopped parsley||2 Teaspoon|
|Grapefruit juice||1⁄2 Cup (8 tbs)|
Sprinkle the fish with salt inside and out and set aside Combine in the cooker the butter, onion, bread and cracker crumbs, dill, pars ley, salt, and pepper.
When thoroughly mixed, use this stuffing to stuff the fish.
Close with string and wrap the fish in cheesecloth.
Put the rack in the cooker.
Place stuffed fish on the rack and pour grapefruit juice over it.
Close cover and put pressure control in place.
When pressure is reached, cook for 8 to 10 minutes.
Cool cooker at once.
