Stuffed Red Snapper is a lovely seafood preparation that has a unique and incomparable taste. This Stuffed Red Snapper recipe is fantastic and I often use it to prepare tasty Stuffed Red Snapper for dinner parties.
Ingredients
  Red snapper 4 Pound, cleaned (1 piece)
  Salt To Taste
  Butter/Margarine 4 Tablespoon
  Onion 1⁄2 Small, minced
  Stale bread crumbs 1 Cup (16 tbs)
  Fine cracker crumbs 1⁄2 Cup (8 tbs)
  Dill 1⁄2 Teaspoon
  Chopped parsley 2 Teaspoon
  Salt 1⁄4 Teaspoon
  Pepper To Taste
  Grapefruit juice 1⁄2 Cup (8 tbs)
Directions

Sprinkle the fish with salt inside and out and set aside Combine in the cooker the butter, onion, bread and cracker crumbs, dill, pars ley, salt, and pepper.
When thoroughly mixed, use this stuffing to stuff the fish.
Close with string and wrap the fish in cheesecloth.
Put the rack in the cooker.
Place stuffed fish on the rack and pour grapefruit juice over it.
Close cover and put pressure control in place.
When pressure is reached, cook for 8 to 10 minutes.
Cool cooker at once.
Serve
