Poached Red Snapper

Ingredients
  Water 4 Cup (64 tbs)
  Lemon 1 , juiced
  Fennel seeds 1 Tablespoon
  Bay leaf 1
  Drawn scaled red snappers 2
Directions

In a fish poacher or oval roaster, combine the water, lemon juice, fennel seeds and bay leaf.
Bring to a boil.
Carefully add the red snappers.
Return to a boil, then reduce the heat.
Cover and gently simmer about 15 minutes or until the fish flakes easily when tested with a fork and is opaque all the way through.
Using a slotted spoon or spatula, carefully transfer the red snappers to a serving platter.
