Baked Red Snapper Plaki

Ingredients
  Celery stalk 1 , cut into 2 inch pieces
  Parsley bunch 1⁄2
  Fresh scallions 3 Bunch (300 gm), cut into pieces
  Garlic 2 Clove (10 gm), finely chopped
  Tomatoes 1 Can (10 oz), crushed (1 Can)
  Red snapper 5 Pound
  Cooking oil 1 Cup (16 tbs)
  Lemons 2 , thinly sliced
  Salt To Taste
  Pepper To Taste
Directions

Mix all vegetables together except lemons.
Put in bottom of pan.
Salt and pepper vegetables.
Cover with water.
Salt and pepper red snapper.
Pour oil over fish.
Place lemon slices on top of fish.
Bake at 350° for 1 1/2 hours or until vegetables are cooked, basting fish every 15 minutes.
