Afro-Carib Snapper

Ingredients
  Red snapper 5 Pound
  Onions 2 Large
  Garlic 3 Clove (15 gm), crushed
  Oil 1⁄4 Cup (4 tbs)
  Hot pepper sauce 1 Dash
  Parsley 1⁄2 Teaspoon
  Pepper white 1 Teaspoon
  Canned tomato paste 6 Ounce (1 Can)
  Bay leaves 2
  Beer 2 Cup (32 tbs)
  Salt 1 Teaspoon
Directions

Clean, wash and dry fish.
Sprinkle lightly with salt and pepper and rub well with garlic.
Set aside for about 1 hour.
Saute onion and garlic residue in oil.
Add tomato paste, spices and beer.
Simmer for 10 minutes.
Pour some of the sauce in a greased baking dish, then place fish and pour the balance over the fish.
Bake at 350° for 25 to 35 minutes.
