Blue Cheese Stuffed Sirloin Steak
|Lean boneless beef sirloin steak||1 Pound (1 Steak)|
|Light beer||2⁄3 Cup (10.67 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Garlic||2 Clove (10 gm), minced|
|Hot sauce||3⁄4 Teaspoon|
|Crumbled blue cheese||4 Ounce|
|Salt free lemon pepper seasoning||1 Tablespoon|
|Vegetable cooking spray||1|
Trim fat from steak.
Cut a large pocket in steak, cutting to, but not through, remaining 3 sides.
Place steak in a large shallow dish.
Combine beer, lemon juice, garlic, and hot sauce; pour over steak.
Cover and marinate in refrigerator 8 hours, turning steak occasionally.
Remove steak from marinade; discard marinade.
Place cheese in steak pocket, spreading evenly throughout pocket.
Secure opening with wooden picks.
Press lemon-pepper seasoning onto both sides of steak.
Coat grill rack with cooking spray; place on grill over medium-hot coals.
Place steak on rack, and cook 6 to 7 minutes on each side or to desired degree of doneness.
Transfer to a serving platter, and remove wooden picks.
