Shrimp Stir Fry

Ingredients
  Zucchini strip 2 Cup (32 tbs), cut into julienne strips
  Celery 1 Cup (16 tbs), cut into diagonal slices
  Green pepper 1 , cut into strips
  Mushrooms 1⁄2 Pound, sliced
  Vegetable oil 1 Tablespoon
  Canned shrimp 4 1⁄2 Ounce, drained (1 Can)
  Jerusalem artichokes 1 Cup (16 tbs), peeled and sliced
Directions

In a large skillet or wok, saute zucchini, celery, green pepper, and mushrooms in oil, stir frying for 5 minutes.
Add shrimp and artichokes; cover and steam 3 to 5 minutes.
