Shrimp Stir Fry

|Zucchini strip||2 Cup (32 tbs), cut into julienne strips|
|Celery||1 Cup (16 tbs), cut into diagonal slices|
|Green pepper||1 , cut into strips|
|Mushrooms||1⁄2 Pound, sliced|
|Vegetable oil||1 Tablespoon|
|Canned shrimp||4 1⁄2 Ounce, drained (1 Can)|
|Jerusalem artichokes||1 Cup (16 tbs), peeled and sliced|
In a large skillet or wok, saute zucchini, celery, green pepper, and mushrooms in oil, stir frying for 5 minutes.
Add shrimp and artichokes; cover and steam 3 to 5 minutes.
