Shrimp Marengo

Ingredients
  Chopped onion 1⁄2 Cup (8 tbs)
  Garlic 1 Clove (5 gm), minced
  Butter/Margarine 2 Tablespoon
  Canned whole tomatoes 1 Pound, chopped (1 Can)
  Canned beef consomme 10 1⁄2 Ounce (1 Can)
  Sugar 1 Tablespoon
  Tomato paste 2 Tablespoon
  Prepared mustard 1 Tablespoon
  Whole oregano 1 Teaspoon
  Basil leaves 1 Teaspoon
  Salt 1 Teaspoon
  Black pepper 1⁄4 Teaspoon
  Tabasco sauce 2 Drop
  Cooked shrimp 1 1⁄2 Pound, peeled and deveined
  Canned whole mushrooms 4 1⁄2 Ounce, drained (1 Jar)
  Cooked rice 1⁄2 Cup (8 tbs)
  Tomato juice 1⁄4 Cup (4 tbs)
  All purpose flour 2 Tablespoon
Directions

Place onion, garlic and butter in a 3 qt.glass casserole dish.
Cover and microwave 2 minutes or until tender.
Stir in tomatoes, consomme, sugar, tomato paste, mustard, spices and tabasco sauce.
Cover and microwave 10 to 15 minutes [SIMMER-4, 30 minutes] Stir once during cooking.
Add shrimp, mushrooms and rice to sauce.
Combine tomato juice and flour.
Stir into sauce.
Cover and microwave 5 to 7 minutes.
Stir once during cooking.
