Shrimp In The Shell
|Shrimp shell||3 Pound|
|Soy sauce||3 Tablespoon|
|Dry sherry||1 1⁄2 Cup (24 tbs)|
|Garlic salt||1⁄4 Teaspoon|
|Finely chopped preserved ginger||1 1⁄2 Tablespoon|
|Canned peach juice||1 Cup (16 tbs)|
|Monosodium glutamate||1 1⁄2 Teaspoon|
Split shrimp through shell from the back, down to, but not through the underside.
Remove veins and wash.
Pat dry on paper towels and arrange a layer in shallow baking dish.
Combine remaining ingredients and pour mixture over shrimp.
Cover and refrigerate for 3 to 4 hours; turn shrimp in sauce.
Drain shrimp; save sauce.
Arrange shrimp on skewers; broil for 3 to 5 minutes on each side until shrimp turns pink.
Baste frequently with sauce
