Party shrimp is a peppy shrimp salad tossed with black olives, pimientos and red onions. Combined with lemon juice, wine vinegar, garlic and bay lea, tossed and chilled with lemon slices, the party shrimp has a lot of zing to it.
|Oil||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄2 Teaspoon|
|Wine vinegar||1 Tablespoon|
|Cayenne pepper||1⁄4 Teaspoon|
|Garlic||1 Clove (5 gm), pressed|
|Shrimp||2 Pound, cooked|
|Black olives||1⁄2 Cup (8 tbs), halved|
|Pimentos||1⁄2 Cup (8 tbs), chopped|
|Red onion||1 Small, sliced|
|Lemon||1 , sliced|
Combine oil, lemon juice, vinegar, pepper, garlic juice and bay leaf together in large bowl.
Place shrimp in sauce in bowl and add olives and pimentos.
Place onion and lemon slices on top.
Refrigerate 1 hour.
