Shrimp With Chayote And Snow Peas
|Peeled chopped chayote||1 Cup (16 tbs)|
|Snow peas||4 Ounce, trimmed and cut into thirds on the diagonal|
|Cooked shrimp||3 1⁄2 Ounce, peeled deveined and halved|
|Red onion||1⁄2 , diced into half rounds|
|Ground mustard||1 Tablespoon|
|Champagne vinegar||1 Tablespoon|
|Plain non fat yogurt||2 Tablespoon|
Bring a saucepan half filled with water to a boil.
Add the chayote and boil for 10 minutes.
Add the pea pods and cook for another 20 seconds.
Drain and rinse the vegetables immediately under cold running water.
Transfer to a bowl and add the shrimp and onion.
In a small bowl, combine the mustard and vinegar.
Whisk in the yogurt, then the sugar.
Pour the dressing over the shrimp mixture and toss to coat all ingredients well.
Chill for at least 1 hour before serving.
