Shrimp Appetizer

Ingredients
  Cooked shrimp 1 Pound
  Extra virgin olive oil 3 Tablespoon
  Vinegar/Lemon juice 2 Tablespoon
  French mustard 1⁄2 Teaspoon
  Red bell pepper 1 Tablespoon, diced
  Shallots 1 Teaspoon, chopped
  Garlic 1 Teaspoon, chopped
  Scallion 1 Teaspoon, chopped
  Parsley 1 Tablespoon, chopped
  Salt 1⁄4 Teaspoon
  Sugar 1⁄4 Teaspoon
  Freshly ground black pepper 1⁄8 Teaspoon
  English cucumber 1⁄2 Cup (8 tbs), thinly sliced in half-moon shape (Long)
Directions

MAKING
1. In a salad bowl, combine all the ingredients (except cucumber) and toss gently.
2. Add cucumber and toss again. Refrigerate.

SERVING
3. Serve chilled in individual quarter plates.
