Shrimp Aspic

Ingredients
  Chicken bouillon cubes 2
  Unflavored gelatin 2 Tablespoon
  Cold water 1⁄4 Cup (4 tbs)
  Boiling water 1 Cup (16 tbs)
  Dry white wine 1 Cup (16 tbs)
  Cooked shrimp 2 Cup (32 tbs)
  Diced cucumber 1⁄2 Cup (8 tbs)
  Diced celery 1⁄4 Cup (4 tbs)
  Diced black olives 1⁄2 Cup (8 tbs)
Directions

Soak the bouillon cubes and gelatin in cold water until soft.
Add the boiling water and stir till gelatin is dissolved.
Then add the wine.
Chop shrimp, reserving about 6 whole shrimp.
Arrange the whole shrimp in a mold and cover with a layer of the gelatin.
Chill until set.
Meanwhile, cool remaining gelatin until thick but not set.
Stir in cucumber, celery, olives and chopped shrimp.
Spoon the mixture into the mold.
Chill until set.
Unmold on lettuce leaves and serve with a dressing of mayonnaise thinned with a little white wine.
