Twice Fried Shrimps For Appetizers
|Jumbo shrimps||2 Pound, shelled and deveined|
|Seasoned all purpose flour||2 Ounce|
|Egg||1 , slightly beaten|
|Fat||2 Cup (32 tbs) (For Deep Frying)|
|Butter||1⁄4 Cup (4 tbs)|
|Olive oil||1⁄4 Cup (4 tbs)|
|Garlic cloves||2 Large, mashed|
|Minced parsley||1 Tablespoon|
|Crumbled dried basil||1⁄2 Teaspoon|
1 Flatten each shrimp.
2 Season the flour with 1 teaspoon salt and some pepper (for each cup of flour)
3 Roll the shrimps in the flour mixture.
4 Dip in the egg.
5 In a frying pan, heat oil (370°Fahrenheit on a frying thermometer) and fry the shrimps in deep hot fat for 1 minute only.
6 Drain well.
7 In a chafing dish or electric skillet melt butter and olive oil; add garlic, parsley, and basil.
8 Heat for a minute or two, add the shrimps and reheat.
9 Serve on toothpicks.
