Twice Fried Shrimps For Appetizers

Ingredients
  Jumbo shrimps 2 Pound, shelled and deveined
  Seasoned all purpose flour 2 Ounce
  Egg 1 , slightly beaten
  Fat 2 Cup (32 tbs) (For Deep Frying)
  Butter 1⁄4 Cup (4 tbs)
  Olive oil 1⁄4 Cup (4 tbs)
  Garlic cloves 2 Large, mashed
  Minced parsley 1 Tablespoon
  Crumbled dried basil 1⁄2 Teaspoon
Directions

MAKING
1 Flatten each shrimp.
2 Season the flour with 1 teaspoon salt and some pepper (for each cup of flour)
3 Roll the shrimps in the flour mixture.
4 Dip in the egg.
5 In a frying pan, heat oil (370┬░Fahrenheit on a frying thermometer) and fry the shrimps in deep hot fat for 1 minute only.
6 Drain well.
7 In a chafing dish or electric skillet melt butter and olive oil; add garlic, parsley, and basil.
8 Heat for a minute or two, add the shrimps and reheat.

SERVING
9 Serve on toothpicks.
