Stir Fried Giant Shrimp

Ingredients
  Jumbo shrimp 8 , uncooked
  Salt To Taste
  Soy sauce 2 1⁄2 Tablespoon
  Dry sherry 2 1⁄2 Tablespoon
  Tomato paste 1 Tablespoon
  Vinegar 1 Tablespoon
  Chinese chili sauce 1 Teaspoon
  Oil 3 Tablespoon
  Onion 1 Small, finely chopped
  Root ginger 1 , peeled
  Garlic 1 Clove (5 gm), crushed
  Sugar 1 Teaspoon
Directions

Rub the shrimp all over with salt.
Mix the soy sauce, sherry, tomato paste, vinegar and chili sauce in a small bowl.
Set aside.
Heat the oil in a large frying pan.
Add the onion, ginger and garlic and stir-fry for 30 seconds.
Add the shrimp and stir-fry for 1 minute.
Sprinkle the sugar over the shrimp and pour in the soy and sherry mixture.
Cook, stirring constantly, for 5 minutes.
Serve immediately.
