Shrimp Vegetable Stir Fry

Ingredients
  Cooking oil 2 Teaspoon
  Medium shrimp 1 Pound, shelled and deveined
  Onion 1 Medium, sliced
  Green bell pepper 1 Medium, sliced into strips
  Garlic 3 Clove (15 gm), minced
  Salt 1⁄4 Teaspoon
  Canned diced tomatoes 14 1⁄2 Ounce, pureed (1 Can)
Directions

Heat oil in large skillet or wok over medium-high heat.
Stir-fry shrimp, onion, bell pepper, and garlic 6-8 minutes, or until shrimp turns pink and vegetables are crisp-tender.
Add salt and tomatoes.
Cook and stir 2-3 minutes, or until thoroughly heated.
Serve over white rice.
