Avocado Stuffed with Shrimp
|Avocados||2 , halved and meat removed, reserve shell|
|Cooked small shrimp||1⁄2 Pound (225 Gram)|
|Garlic||1 Clove (5 gm), mashed|
|Chopped cilantro||2 Tablespoon|
|Cayenne pepper||1 Pinch|
|Chili powder||1 Teaspoon|
|Lemon||1⁄2 , juiced|
|Mayonnaise||57 Gram (1/4 Cup)|
|Grated jack cheese||2 Tablespoon|
|Fresh salsa||1⁄2 Cup (8 tbs) (For Serving)|
Preheat oven to 350°F (180°C).
Lightly mash avocados and mix with remaining ingredients, except cheese.
Stuff back into empty shells.
Bake for 15 to 20 minutes.
Top with grated Jack cheese and return to oven until cheese has melted.
Serve with fresh salsa.
