Shrimp Salad, Padre Style

Ingredients
  Cooked rice 1 Cup (16 tbs)
  Cooked shrimp 1 Cup (16 tbs), shelled, deveined and diced
  Salt 1⁄8 Teaspoon
  Fresh lemon juice 1 Tablespoon
  Green bell pepper 1⁄4 , slivered
  Minced onion 1 Tablespoon (White / Yellow / Green)
  Chopped black olives 1 Tablespoon
  Diced raw cauliflower 3⁄4 Cup (12 tbs)
  French dressing 2 Tablespoon (May Use Low Calorie)
  Black pepper 1 Dash
  Mayonnaise 1⁄3 Cup (5.33 tbs)
Directions

Toss all ingredients together; chill, and serve on a bed of lettuce leaves.
