1. In a skillet, heat olive oil and add shallots and garlic and caramelize.
2. Add the shrimp, the zest of an orange, lemon and lime and the juice from the citrus.
3. Add the vegetable stock and let it cook.
4. In the meanwhile, cook the vermicelli noodles according to the package instructions.
5. Add the cooked vermicelli to the shrimp and add the butter, chili flakes, cilantro, salt and pepper and toss well.
