Shrimp Vindaloo

Ingredients
  Large shrimp 2 Pound, cooked, shelled
  Ghee/Butter 2 Tablespoon
  Onion 1 Cup (16 tbs), chopped
  Ginger 1 Tablespoon, grated
  Ground coriander 2 Tablespoon
  Turmeric 2 Teaspoon
  Wine vinegar 3 Tablespoon
  Salt 1 Teaspoon
  Coconut milk 1 Can (10 oz) (Unsweetened)
  Sweet and low 1 Gram (1 Packet)
  Lemon extract 1⁄4 Teaspoon
Directions

1. Heat ghee in large skillet and saute onions for 2 minutes.
2. Add ginger, coriander and turmeric. Reduce the heat to medium and cook for 2 minutes.
3. Add vinegar and salt, stir. Add shrimp stir until well coated. Add coconut milk, sweetener and lemon extract. Simmer for 10 minutes.
