Stuffed Jumbo Shrimp
|Large shrimp||1 Pound (in the shell)|
|Celery||1⁄4 Cup (4 tbs), finley chopped|
|Onion||1 Small, finely chopped|
|Butter/Margarine||3 Tablespoon, melted|
|Bread crumbs||1⁄2 Cup (8 tbs)|
|Parsley||1⁄2 Teaspoon, chopped (fresh)|
|Garlic salt||1⁄4 Teaspoon|
Peel shrimp, leaving shell on tail section.
Lay on back.
With a sharp knife split almost through, 1/2-inch below tail.
Wash under running water.
Combine celery, onion, and butter in 1-quart casserole.
MICROWAVE 3 MINUTES on HIGH, or until onion is transparent.
Stir in remaining ingredients.
Brush shrimp with melted butter.
Spoon 1 tablespoon of mixture into butterflied area of shrimp.
Place in 8-inch round cake dish with tails resting straight up on the sides of dish.
MICROWAVE 3 to 6 MINUTES on '8', or until shrimp are opaque.
Do not overcook.
Time varies slightly with size of shrimp.
