Shrimp and Sun Dried Tomatoes
|Angel hair pasta/Linguine/spaghetti||12 Ounce|
|Oil packed sun dried tomatoes||4 Ounce, drained and chopped|
|Large shrimp||1 1⁄4 Pound, peeled and deveined|
|Garlic||2 Clove (10 gm)|
|Vegetable broth/Chicken broth||1⁄2 Cup (8 tbs)|
|Dry white wine||1⁄2 Cup (8 tbs)|
|Dried basil||1 Teaspoon (Or To Taste)|
|Imitation crabmeat||1⁄2 Pound, chopped|
Prepare the pasta according to package directions.Meanwhile, place the tomatoes in a deep skillet over medium-high heat.
Add the shrimp and garlic and cook, stirring, for 5 minutes, or until the shrimp are opaque.
Add the broth, wine, and basil and bring to a boil.
Add the crabmeat and reduce the"heat to low.
Simmer for 5 minutes.
Place the pasta in a serving bowl and top with the shrimp mixture.
Sprinkle with the cheese (if using).
