|Jumbo peeled deveined shrimp||1 1⁄2 Pound|
|Lemon juice||2 Tablespoon|
|Unsalted margarine||1⁄4 Cup (4 tbs), melted|
|Finely chopped fresh parsley||1⁄4 Cup (4 tbs), divided|
|Garlic||2 Clove (10 gm), minced|
|White bread slice||2 , made into crumbs (Enriched)|
Butterfly the shrimp by cutting lengthwise along the back, being careful not to cut all the way through; spread and flatten to form the butterfly shape.
Place 6 ounces shrimp in each of 4 individual baking dishes.
Sprinkle each with 1 1/2 teaspoons lemon juice.
In a small bowl, combine margarine, 3 tablespoons parsley, and garlic; dot each portion of shrimp with 1/4 of margarine mixture.
In another bowl, combine bread crumbs, remaining parsley, and paprika.
Sprinkle 1/4 of bread crumb mixture over each shrimp serving.
Bake at 400°F.
for approximately 15 minutes or until shrimp are pink and crumbs golden brown.
Garnish each serving with 1 lemon wedge.
