Batter Fried Shrimp

Ingredients
  Sifted enriched flour 2 Cup (32 tbs)
  Cornstarch 1⁄2 Cup (8 tbs)
  White corn meal 1⁄4 Cup (4 tbs)
  Baking powder 1⁄2 Teaspoon
  Egg 1 , slightly beaten
  Water 3 Cup (48 tbs)
  Milk 1⁄2 Cup (8 tbs)
  Shucked large shrimps 5 Pound
Directions

Combine all ingredients except shrimp, but don't stir too much,that's part of the secret of the crisp almost-lacy jackets on these shrimp.
Use a small amount of batter at a time, in a small bowl; mix in plenty of shrimp, so each one is only lightly coated.
Fry in deep hot fat (about 400°) 3 or 4 minutes.
Serve with Sweet and Sour Sauce, Red Sauce, and/or Chinese Mustard for dipping.
