Open Face Shrimp Melt
|Shelled and deveined cooked shrimp||3 Ounce, cut lengthwise into halves (Small Sized)|
|Finely chopped celery||1⁄4 Cup (4 tbs)|
|Chopped scallion||2 Tablespoon (Green Onion)|
|Reduced-calorie mayonnaise||4 Teaspoon (1 Tablespoon Plus 1 Teaspoon)|
|Dry sherry||1 Tablespoon|
|Lemon juice||2 Teaspoon|
|Dijon-style mustard||1 Teaspoon|
|Low calorie wheat bread slice||2 , lightly toasted (40 Calories Per Slice)|
|Thin tomato slices||4|
|Reduced fat monterey jack cheese slices||1 1⁄2 Ounce (2 Slices, 3/4 Ounce Each)|
1. Preheat broiler, in small mixing bowl combine all ingredients except bread, tomato slices, and cheese; mix well.
2. Onto each slice of bread arrange 2 tomato slices and half of the shrimp mixture, then top with 1 cheese slice.
3. On nonstick baking sheet arrange sandwiches and broil 5 to 6 inches from heat source until cheese melts, about 1 minute.
