Skewers Of Shrimp And Red Onion
|Roasted red pepper||1 Ounce, pureed|
|Olive oil||2 Tablespoon|
|Lemon juice||2 Tablespoon|
|Cayenne pepper||1⁄2 Teaspoon|
|Garlic||2 Clove (10 gm), blanched and pureed|
|Fennel seed||1 Teaspoon|
|Shrimp||24 Large, shelled, deveined and washed|
|Red onion||1 Large, cut in wedges|
Mix all ingredients, except shrimp and onion, together in bowl.
Place shrimp in bowl and add marinade. Mix and marinate 1 hour.
Preheat barbecue at medium.
Alternate shrimp and onion on skewers.
Oil grill and add skewers. Cover and cook 3 to 4 minutes on each side. Season to taste and baste during cooking.
Serve with salad or rice.
