Skewers Of Shrimp And Red Onion

Ingredients
  Roasted red pepper 1 Ounce, pureed
  Olive oil 2 Tablespoon
  Lemon juice 2 Tablespoon
  Cayenne pepper 1⁄2 Teaspoon
  Garlic 2 Clove (10 gm), blanched and pureed
  Fennel seed 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Shrimp 24 Large, shelled, deveined and washed
  Red onion 1 Large, cut in wedges
Directions

Mix all ingredients, except shrimp and onion, together in bowl.
Place shrimp in bowl and add marinade. Mix and marinate 1 hour.
Preheat barbecue at medium.
Alternate shrimp and onion on skewers.
Oil grill and add skewers. Cover and cook 3 to 4 minutes on each side. Season to taste and baste during cooking.
Serve with salad or rice.
