Garlic Shrimp Saute

  Butter/Margarine 2 Teaspoon
  Finely chopped celery 60 Gram (1/2 Cup)
  Finely chopped shallots 40 Gram (1/3 Cup)
  Garlic 2 Clove (10 gm), minced or pressed
  Red bell pepper 6 Ounce, seeded and finely chopped (1 Medium Sized / 170 Grams)
  Fat free low sodium chicken broth 300 Milliliter (1 1/4 Cups)
  Large raw shrimp 1 Pound, shelled and deveined (31 To 35 Per Pound)
  Fruity white wine 160 Milliliter (2/3 Cup, Such As Johannesburg Riesling)

1. Melt butter in a wide nonstick frying pan or wok over medium-high heat. Add celery, shallots, garlic, bell pepper, and broth. Cook, stirring often, until liquid evaporates (about 10 minutes).
2. Add shrimp to pan and stir-fry until just opaque in center; cut to test (3 to 4 minutes). Remove shrimp from pan with tongs or a slotted spoon; place in a serving bowl and keep warm. Add wine to pan and bring to a boil; then boil, stirring often, until liquid is reduced by about two-thirds (about 7 minutes). Spoon sauce over shrimp
