Magic Fried Shrimp
|Shelled deveined shrimp||1 3⁄4 Pound (Medium Ones)|
|All purpose flour||1 Cup (16 tbs)|
|Corn flour||1 Cup (16 tbs)|
|Cornmeal||1 Cup (16 tbs)|
|Milk||1 Cup (16 tbs)|
|Egg||1 Large, beaten|
|Vegetable oil||2 Cup (32 tbs) (For Frying)|
Sprinkle shrimp generously and evenly on both sides with about 1 tablespoon of the Seafood Magic, patting it in by hand.
In medium bowl, combine remaining Seafood Magic with the flour, corn flour and cornmeal until well blended.
In separate bowl, combine milk and egg, beating until well blended.
Heat 2 inches or more of oil in deep-fryer or large saucepan to 375°F.
Fry shrimp in small batches as follows: just before frying each batch of shrimp, coat with flour, shake off excess flour and coat with egg mixture, then coat again with flour, shaking off excess.
Carefully slip shrimp into hot oil and fry just until crisp and cooked, about 1 minute; do not overcook. (Adjust heat as needed to maintain temperature at about 375°F.)
