Put the water and soy sauce into a shallow saucepan and bring to the boil.

Cook for 5 minutes.
Using a slotted spoon, transfer the prawns (shrimp) to a warmed bowl and keep hot.
Add the bamboo shoot slices to the pan and return to the boil.
Stir in the sake or sherry and mirin or sherry and cook for 3 minutes.
Return the prawns (shrimp) to the pan and stir until the mixture is blended.
Cook for 1 minute.
Transfer the mixture to a warmed serving dish and serve at once.
