Barbecued Shrimp On A Skewer
|Onion soup mix/Onion mushroom recipe soup mix||1 Packet|
|Canned peeled tomatoes||14 1⁄2 Ounce, undrained and chopped (1 Can)|
|Vegetable oil/Olive oil||1⁄2 Cup (8 tbs)|
|Dry white wine/Vermouth||1⁄4 Cup (4 tbs)|
|Chopped basil leaves||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
|Cracked peppercorns||1 Teaspoon|
|Uncooked large shrimp||2 Pound, cleaned|
|Cooked ham slices||4 , cut into thin strips|
|Chopped parsley||1 Tablespoon|
In large bowl, combine onion recipe soup mix, tomatoes, oil, wine, basil, lemon juice and peppercorns.
Cover and marinate in refrigerator, stirring occasionally, at least 2 hours.
Remove shrimp, reserving marinade.
On skewers, alternately thread shrimp with ham strips, weaving ham around shrimp.
Grill or broil, turning and basting frequently with reserved marinade, until shrimp are done.
Bring remaining marinade to a boil, then simmer 2 minutes; stir in pars ley.
