Deep Fried Marinated Shrimp
|Raw jumbo shrimp||12 , shelled but with tails left on, deveined and butterflied ,cut almost in half lengthwise, opened and flattened out|
|Orange juice||1⁄4 Cup (4 tbs)|
|Lemon juice||1⁄3 Cup (5.33 tbs)|
|Annatto seeds||1 Tablespoon, crushed (Achiote)|
|Mashed garlic||1 Tablespoon|
|Oil||2 Cup (32 tbs) (For Deep Frying)|
Place butterflied shrimp in a shallow dish.
Combine all the remaining ingredients except the oil and pour over the shrimp.
Cover and refrigerate 1 to 2 hours, turning shrimp occasionally.
Take shrimp out of the marinade and deep-fry at 365 degrees on a deep-fry thermometer for about 1 minute, or until shrimp are just cooked through.
