Deep Fried Marinated Shrimp

Ingredients
  Raw jumbo shrimp 12 , shelled but with tails left on, deveined and butterflied ,cut almost in half lengthwise, opened and flattened out
  Orange juice 1⁄4 Cup (4 tbs)
  Lemon juice 1⁄3 Cup (5.33 tbs)
  Annatto seeds 1 Tablespoon, crushed (Achiote)
  Mashed garlic 1 Tablespoon
  Oregano 1 Teaspoon
  Cumin 1⁄2 Teaspoon
  Oil 2 Cup (32 tbs) (For Deep Frying)
Directions

Place butterflied shrimp in a shallow dish.
Combine all the remaining ingredients except the oil and pour over the shrimp.
Cover and refrigerate 1 to 2 hours, turning shrimp occasionally.
Take shrimp out of the marinade and deep-fry at 365 degrees on a deep-fry thermometer for about 1 minute, or until shrimp are just cooked through.
