Deep Fried Shrimp With Lichees

  Deep fried shrimp 1 Pound
  Canned lichee fruit 1 Cup (16 tbs)
  Fresh ginger slice 2
  Ginger root slice 2 (Use Fresh)
  Vinegar 1⁄3 Cup (5.33 tbs)
  Sugar 1⁄3 Cup (5.33 tbs)
  Salt 1⁄2 Teaspoon
  Heavy soy sauce 1⁄2 Teaspoon
  Oil 1 Tablespoon

1. Deep-fry shrimp as in Basic Deep-fried Shrimp and keep warm. Drain lichee fruit
2. Mince ginger root, then combine with vinegar, sugar, salt and soy sauce.
3. Heat remaining oil. Stir in ginger-vinegar mixture and bring to a boil; then simmer, stirring, 2 minutes.
4. Stir in lichee fruit only to heat through. Spoon sauce over shrimp and serve at once.
