Avocado Stuffed With Shrimp
|Shrimp||2 Pound, boiled and shelled|
|Hard boiled eggs||2|
|Mayonnaise||4 Tablespoon (To Bind All Together)|
|Bell pepper||1⁄2 Medium|
|Lemon||1 , juiced|
The boiling of the shrimp in flavored water and will make all the difference in the world to this salad's flavor.
Chop the ingredients for the filling very fine, except for the shrimp, which should be cut into small segments but not minced or mashed.
Mix all together and season.
Just before serving time, peel the avocados, cut them in halves, and remove the pits.
Then fill the cavity in each avocado half with a mixture of the shrimp and other ingredients.
Top the filling with tiny crests of mayonnaise (about 1/4 teaspoon) and dot with two quarter slices of black olives crisscrossed over each other.
