Shrimp Stuffed Pompano
|Cooked shrimps||1 Pound|
|Egg||1 , well beaten|
|Heavy cream||1 Cup (16 tbs)|
Split the cleaned pompano, leaving head and tail intact.
Place in an oiled, shallow baking pan.
Work shrimp through a food grinder, then combine with egg, salt, pepper, sherry, and half the cream.
When well blended, stuff fish cavities with the mixture.
Pour remaining cream over all and bake in a preheated 350° oven for 40 minutes.
