Shrimp Stuffed Pompano

Shrimp stuffed pompano is a seafood stuffed fish recipe. Prepared with pompano fillets, this stuffed pompano recipe is sherried and cooked with cream for a rich and full flavor to it.
Ingredients
  Pompano 4 Small
  Salt 1⁄2 Teaspoon
  Pepper 1 Dash
  Cooked shrimps 1 Pound
  Sherry 3 Tablespoon
  Egg 1 , well beaten
  Heavy cream 1 Cup (16 tbs)
Directions

Split the cleaned pompano, leaving head and tail intact.
Place in an oiled, shallow baking pan.
Work shrimp through a food grinder, then combine with egg, salt, pepper, sherry, and half the cream.
When well blended, stuff fish cavities with the mixture.
Pour remaining cream over all and bake in a preheated 350° oven for 40 minutes.
Baste occasionally.
