Ingredients
  Artichoke bottoms 6 , cooked
  Olive oil 3 Tablespoon
  Wine vinegar 1 1⁄2 Tablespoon
  Salt To Taste
  Freshly ground black pepper To Taste
  Cooked shrimp 1 Cup (16 tbs), cut into small pieces
  Green pepper 1⁄2 , finely diced
  Mayonnaise 1⁄3 Cup (5.33 tbs)
  Lemon juice 2 Teaspoon
  Paprika To Taste
  Cooked shrimp 6 (Whole)
Directions

1. Prepare artichoke bottoms as for stuffed artichokes
2. Marinate the artichoke bottoms in a mixture of the olive oil, wine vinegar, salt and pepper about one hour.
3. Mix the cut-up shrimp, green pepper and mayonnaise seasoned with lemon juice and paprika. Drain the artichoke bottoms and place on individual serving plates. Pile the shrimp mixture atop the artichoke bottoms, cover with a thin layer of mayonnaise and garnish each with a whole shrimp.
