Shortbread With Roasted Almonds

Ingredients
  Plain flour 185 Gram
  Sugar 60 Gram
  Butter 125 Gram, chilled
  Vanilla essence 5 Drop
  Caster sugar 2 Tablespoon (For Sprinkling)
  Chopped roasted almonds 2 Tablespoon
Directions

Preheat oven to 150°C (300°F).
Place all ingredients in the work bowl and process until dough forms a ball, approximately 5-10 seconds, turning the processor on and off several times.
Do not over process.
Turn the pastry on to a floured surface and roll out to the diameter of the flan.
Place it in the flan and press down into a flat cake.
Prick the shortcake with a fork and bake for one hour in the oven.
Sprinkle with castor sugar and leave to cool.
