Shortbread

Ingredients
  Flour 12 Ounce
  Rice flour 1⁄2 Cup (8 tbs)
  Salt 1 Pinch
  Butter 8 Ounce
  Caster sugar/Fruit sugar 2 Ounce
  Baking powder 1 Teaspoon
Directions

Mix dry ingredients together in food processor.
Cut up butter and add to above.
Turn processor on until everything is mixed and lining the sides of the bowl.
Check if the mixture is right consistency by removing small amount to see if it will hold together when lightly rolled.
Roll mixture into 1/2 inch thic'cness and cut with cookie cutters into different shapes.
Prick top of each shortbread with a fork.
Bake 25 to 30 minutes at 275°F.
