Violet's Shortbread

Ingredients
  All purpose flour 2 Cup (32 tbs)
  Rice flour 2 Tablespoon
  Superfine sugar 3⁄4 Cup (12 tbs)
  Salt 1 Pinch
  Butter 1 Cup (16 tbs), softened
  Superfine sugar 1 Teaspoon (To Sprinkle)
Directions

GETTING READY
1. Preheat the oven to 300° F

MAKING
2. On a table, sift together the all purpose flour, rice flour, sugar and salt; make a well at its centre and add butter
3. With the hands, work the butter slowly into the dry ingredients until the mixture resembles pastry dough; make a ball of the sough adn roll it out to quarter inch thickness on a dusted surface
4. Using a sharp knife, cut the dough into 2" sqquares, place them all on a cookie sheet and bake them for half an hour
5. While still hot, turn them out of the cookie sheet and dip their top in superfine sugar; place them on a wire rack and allow to cool completely

SERVING
6. Serve as appropriate
