Scotch Shortbread

Ingredients
  Butter 1 Cup (16 tbs) (At Room Temperature)
  Confectioners sugar 1⁄2 Cup (8 tbs)
  Vanilla extract 1 Teaspoon
  Unbleached flour 2 Cup (32 tbs)
  Salt 1⁄4 Teaspoon
  Baking powder 1⁄4 Teaspoon
Directions

Preheat oven to 375° F.
In a mixing bowl, cream butter and sugar together until fluffy. Add vanilla extract.
In a separate bowl, combine flour, salt and baking powder. Add to creamed mixture and mix thoroughly, using a heavy beater or wooden spoon.
Place dough on a lightly greased cookie sheet and roll out to 1/3-inch thickness. If necessary, sprinkle top of dough with a little flour to prevent sticking. Prick holes in top with a fork.
Bake for 20 minutes or until golden. Remove from oven and slice into squares while still hot. If the center portion needs more baking, remove outer pieces and return center portion to oven for a few more minutes.
