Butter Shortbread

  Flour 8 Ounce (225 Gram)
  Icing sugar 1 1⁄2 Ounce (40 Gram)
  Ground rice 15 Milliliter (1 Tablespoon)
  Butter 6 Ounce (175 Gram)

Sift the flour, icing sugar and ground rice into a bowl.
Rub in the butter until it is well blended.
Roll out the dough to about .75 cm./ 1/4 in.thick.
Cut into 5 cm./ 2 in.circles with a pastry cutter and transfer the circles to an ungreased baking sheet.
Put into the oven preheated to moderate (180°C/350°F or Gas Mark 4) and bake for 15 to 20 minutes, or until lightly browned and firm to touch.
