|Confectioners' sugar||2 Teaspoon|
|Potato flour||1⁄2 Cup (8 tbs)|
|Arrowroot||1⁄2 Cup (8 tbs)|
|Finely chopped nuts||1 Cup (16 tbs)|
Cream together the butter and sugar.
Add vanilla and stir until light and fluffy.
Combine potato flour and arrowroot and blend into butter mixture.
Stir in the nuts.
Form into a roll about 1 inch in diameter.
Wrap in waxed paper and chill 1 hour.
Cut into 1/2-inch slices; cut again into bite-sized pieces.
Place on an ungreased cookie sheet.
Bake at 300° 30-40 minutes, until lightly browned.
Remove from pan and roll in confectioners sugar to coat.
