|Ground almonds||2 Ounce (50 Gram)|
|Butter||4 Ounce (100 Gram)|
|Sugar||3 Ounce (75 Gram)|
|Almond essence||3 Drop|
|Castor sugar||1 Tablespoon (To Sprinkle)|
Mix the flour, rice flour, ground almonds and butter together, using the double-bladed chopping knife, until the mixture resembles fine breadcrumbs.
Add the remaining ingredients and mix into a dough.
Place in an 18-cm/7-in square shallow tin, pressing down until smooth.
Prick all over with a fork.
Bake in a moderate oven (180 C, 350 F, gas 4) for 50-60 minutes.
Mark into fingers while hot and sprinkle with sugar.
