Poppy Seed Crunch
|Sugar||1⁄2 Cup (8 tbs)|
|Vanilla extract||1 Teaspoon|
|Flour||1 1⁄2 Cup (24 tbs), sifted|
|Baking powder||1 1⁄2 Teaspoon|
|Brown sugar||1 Cup (16 tbs)|
|Poppy seeds||1 Cup (16 tbs), ground|
1 Preheat the oven to 350° F.
2 Lightly grease an 8-inch-square pan with butter.
3 In a bowl, cream the butter.
4 Gradually add in the sugar.
5 Stir in the egg yolks and vanilla.
6 In another bowl, sift together the flour, salt and baking powder.
7 Gradually add to the butter mixture, blending well.
8 Pat into the prepared pan.
9 In a separate bowl, beat the egg whites until they begin to stiffen.
10 Beat in the brown sugar.
11 Fold the poppy seeds into the batter.
12 Spread evenly over the dough.
13 Bake for 25 minutes or until delicately browned and set.
14 Allow to cool.
15 Cut into even squares.
16 Serve warm
