Poppy Seed Loaf
|Sugar||1 Cup (16 tbs)|
|Vegetable oil||3⁄4 Cup (12 tbs)|
|Vanilla extract||1 Teaspoon|
|Poppy seeds||1⁄4 Cup (4 tbs)|
|Baking powder||2 Teaspoon|
|Flour||2 Cup (32 tbs)|
|Evaporated milk||1 Cup (16 tbs)|
Preheat oven to 350°. Grease and flour a 9" x 5" x 3" loaf pan.
Stir together sugar, eggs, oil, vanilla, and poppy seeds.
Combine salt, baking powder, and flour. Alternately add flour mixture and milk in small amounts to sugar mixture, beating after each addition.
Pour into prepared pan and bake at 350° for 50 minutes or until center springs back when lightly touched.
Cool 15 minutes on a rack. Remove from pan, slice and serve warm or at room temperature with marmalade or cream sauce.
