Fried Squid Savory

  Frying oil 2 Cup (32 tbs)
  Squid 2 Pound
  Beer 1⁄2 Cup (8 tbs)
  Flour 6 Tablespoon
  Parsley 1 Bunch (100 gm)
  Salt To Taste
  Pepper To Taste

1 Heat the oil in a deep fat fryer to 350°F.
2 Clean the squid by cutting off the black pouch and the transparent cartilage. Cut off the transparent skin, wash in a lot of water and cut into long, fine strips. Lay them on absorbent paper.
3 Pour the beer into an earthenware pot. Put the flour in a separate bowl; add salt and pepper and mix. Tie a knot in each strip of squid and retain with a wooden cocktail stick.
4 Soak the knotted strips in beer, then toss them in flour, one at a time. Shake off excess flour, lower them in- to the hot oil and let them cook until brown.
5 Drain the squid. Arrange on a serving dish. Put the bunch of parsley into the hot oil and fry for 2 minutes. 6 Serve very hot with aperitifs.
