|Finnan haddie||1 1⁄2 Pound|
|Macaroni bow ties||5 Ounce|
|Grated sharp cheddar cheese||1 1⁄2 Cup (24 tbs)|
|Onion||1 Large, sliced thin|
|Celery||1⁄2 Cup (8 tbs), sliced thin|
|Green pepper||1⁄2 Cup (8 tbs), sliced thin|
|Garlic||4 Clove (20 gm), minced|
|Milk||2 Cup (32 tbs)|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Flour||1⁄4 Cup (4 tbs)|
Place finnan haddie in pan and cover with boiling water.
Let sit while you are preparing sauce.
Saute' onion, celery, green pepper in the butter until soft but not brown.
Add garlic and saute' 1/2 minute more.
Add flour and mix thoroughly.
Add milk gradually to make a thick sauce.
Add cheese and remove from heat.
Cook and drain the macaroni.
Break fish into bitesize pieces, removing any bones; discard liquid.
Combine the sauce, macaroni, fish in 3 quart casserole.
Sprinkle with additional grated cheese.
Bake in 350 degree oven for 20 minutes to 1/2 hour, until bubbly
