Fried Octopus

  Octopus 2 Pound
  Water 1 Cup (16 tbs)
  Greek wine 1⁄4 Cup (4 tbs)
  Garlic 2 Clove (10 gm), slivered
  Salt 1 Teaspoon
  Black pepper 1 Teaspoon
  Oregano 2
  Basil 2
  Lemon slice 1
  Eggs 2 Small
  Flour 1 Cup (16 tbs)
  Frying oil 2 Cup (32 tbs)

Wash the octopus, remove the ink sac and cut the meat into pieces.
Wash again.
Place the octopus in a pan and cover with water.
Add the wine, garlic, salt, pepper, basil, oregano and lemon slice.
Bring to boil over high heat.
Reduce heat and simmer until the water is absorbed and the octopus is tender.
In a separate bowl beat the eggs and mix in the flour, stirring until you have a smooth batter.
Dip the octopus pieces into the batter.
Fry a few at a time in the hot oil.
Drain on paper toweling.
Serve hot.
