Fried Prawn Balls

Ingredients
  Prawns 1⁄2 Kilogram, shelled, deveined and chopped
  Spring onions 3
  Water chestnuts 8 , peeled, washed, finely chopped (Fresh)
  Salt 2 Teaspoon
  Dry sherry 2 Teaspoon
  Ginger 1 Teaspoon, finely grated
  Egg white 1 , beaten until stiff
  Cornflour 2 Teaspoon
  Oil 2 Cup (32 tbs) (For Frying)
  Red sauce 1 Cup (16 tbs) (Chinese)
Directions

Chop spring onions very finely.
Mix prawns, water chestnuts, spring onions, salt, sherry and ginger in a bowl.
Add egg white to the mixture with cornflour.
Make walnut size balls.
Heat oil and fry a few balls at a time until golden brown.
Drain on kitchen paper and serve hot with sauce.
VEGETARIAN VERSION:
Use 100 gms.soya granules (soaked and ground) instead of prawns and follow the recipe as above and serve with sauce.
